Fermentation: Basic

 

1)      Fermentation

  • Process convert sugar into: Alcohol, Acid & Gases
  • It is metabolic process (chemical process)

2)      2 types of fermentation:

  • Solid State: Microorganism grow on moist with a little or no water
  • Submerged: Used dissolve substrate for example sugar solution or solid solution

3)      Aerobic fermentation means with oxygen

4)      Anaerobic fermentation means without oxygen

5)      Factors affects fermentation:

  • Temperature
  • pH
  • Oxygen
  • Carbon dioxide
  • Operational system: Batch, Fed-batch, Continuous, Feeding with precision, Mixing & Shear rates in fermentors
